Lunch Ideas that are Healthy & Delicious

I remember the dread of opening up my lunchbox and finding yet another peanut butter and jelly sandwich waiting for me. I liked them but eating them every single day was too much. Now, as a mom, I’ve decided to step up the lunchbox game and get creative with what my kids eat on a daily basis. I’ve compiled a list of healthy lunches that are tasty to even the pickiest eaters.

From Mexican to Asian inspired food, having variety makes lunch time exciting. Instead of the same boring lunches, mix things up with some of these fun ideas.

Mexican Fiesta

Cheese quesadillas are so easy to make and still good when cold. Make them the night before or the morning of. Add a side of avocado slices or guacamole and tortilla chips and you’ve got a seriously tasty lunch. Make sure to add in some fruit, too. From pineapple chunks to apple slices, having a healthy, sweet dessert will complete this meal.

Asian Inspired

For an Asian inspired lunch, make spring rolls. Simply take rice paper wrappers and roll up pork, shrimp, or even tofu. If you don’t have rice paper, you can use lettuce leaves. One of the greatest parts of this meal is that the kids can get involved. Let them choose what goes inside the wrap.

For sides, you can really get creative. Steamed rice, bell peppers, and edamame are all great options. For dessert, add in strawberries with a side of dark chocolate pieces.

Going Greek

Hummus and pita bread are the perfect substitute for a peanut butter sandwich. Add in some salami, olives, baby tomatoes, carrots, and grapes to get a nutritious and delicious meal.

Breakfast Plate

If your kids are picky eaters, breakfast is a go-to solution. A hard-boiled egg, blueberry pancakes, and some sausage or bacon are nice and filling. Add in a fruit cup and some yogurt to complete this lunch.

When making your kids’ lunches, try to give them variety. Add in a protein, carbohydrates, fruit, vegetables, and dairy. Having five different items in their box to choose from will help avoid monotony.
