Add a side of avocado slices or guacamole and tortilla chips and you’ve got a seriously tasty lunch. Make sure to add in some fruit, too. From pineapple chunks to apple slices, having a healthy, sweet dessert will complete this meal.
For an Asian inspired lunch, make spring rolls. Simply take rice paper wrappers and roll up pork, shrimp, or even tofu. If you don’t have rice paper, you can use lettuce leaves. One of the greatest parts of this meal is that the kids can get involved. Let them choose what goes inside the wrap.
For sides, you can really get creative. Steamed rice, bell peppers, and edamame are all great options. For dessert, add in strawberries with a side of dark chocolate pieces.
